There are huge differences between day and night time temperatures here, particularly when the grapes are ripening. As a result, the wines are sophisticated and concentrated.
Three chateaux are intrinsically linked with the region’s history : Viviourès, les Tours de Salles and Montferrand which had been owned by the Bishops of Maguelone, and was destroyed by Louis XIV during the Wars of Religion,
A tradition : on the first Sunday after 19 March, climb the Pic St Loup. Your reward : a glass of wine on the summit !
